Almost every Spicemix del Mondo can be used to flavour this bread.The degree of salt must be 8 gram. So the amount of seasalt changes per recipe, depending on wich Spicemix del Mondo you use.
1. Mix the sourdough starter with the flour, water and Spicemix del Mondo. Add the rest of the salt after 30 minutes.
2. Let rise for 2-3 hours on room temperature, fold halfway.
3. After 3 hours fold again and bring to tension. Place in a basket and let rise for 12-16 hours in the refrigerator.
4. Pull the bread out of the basket and slice with a sharp knife your “signature”
– 200g Sourdough starter
– 400g Flour, patent, raie or whole grain
– 220g Water
– 24g Verstegen Spicemix del Mondo – Sirtaki 320 g (Artikelnummer: 582881)
– 5g Seasalt
